Conversion of structural cellulose and hemi- cellulose into sugars from plant-waste biomass not traditionally used as food and beverage sources.

Method.

Plant fibres are opened for increased reaction kinetics and removal of unwanted components that impact flavour and consumer safety before enzymes are deployed to convert biomass into food-grade sugars.

Result.

Hemp sugar designed for downstream processing through three pathways: concentration, dilution and fermentation.
